Chocolate Chip Banana Bread
This recipe just kind of fell together for me. Like everyone else, I have made banana bread for years!! What makes this one different is I have tweaked it a bit by adding chocolate chips, cream and beating the wet ingredients to make them light and airy but not dry. The end result is a bit lighter but without losing flavor or feel. I have a feeling this will be making a regular appearance around the holidays. Chocolate Chip Banana Bread
Ingredients
1 Stick of butter softened
1 Cup of Sugar
4 T Heavy Cream
1 teaspoon Vanilla
2 XL Eggs
1 Cup Semisweet Chocolate Chips
2 Cup All purpose Flour
2 tsp Baking Soda
2 pinches of salt
Instructions
o Preheat oven to 350°F
o Cream butter and sugar until fluffy using a hand-held or stand mixer.
o Add cream and continue beating until fully incorporated and mix is light and airy
o Add eggs 1 at a time fully incorporating each before adding the next.
o Add vanilla beating until completely mixed in
o Peel bananas and add to the mix. Mash and break them down until creamy.
o Add in Chocolate Chips, folding them in carefully. Set aside.
o In a separate mixing bowl combine dry ingredients and whisk them together.
o Fold the dry ingredients into the wet.
o Coat a loaf pan with butter
o Pour the batter into the loaf pan and spread evenly.
o Place in the center of the oven and bake for an hour.
o Check by inserting a clean knife into the center. If comes back with batter, keep baking and checking at ten-minute intervals until done. There can be a few damp crumbs.
o Remove from the oven, run a knife around the edge to separate the bread from the pan and allow to cool.
o Wrap in foil or place in airtight container to store.
