Quarantine Pimiento Cheese

As long as I can remember, I have loved to create in the kitchen. Cooking for others is totally part of my love language. So it is no surprise that I started mixing things up a bit in the kitchen when we went into quarantine. It is one way I find my fun!

Is there anything cheerier than Pimiento Cheese? Field of sunflowers? Maybe. I’m partial to dad jokes that make my children’s eyes roll as they groan begging me to stop. But that’s another post.

Enter my latest and to date my most favorite version of pimiento cheese. This creamy delight of savory, cheesy goodness has been updated with not just a hit of jalapeño but also a surprise of sweetness. The secret ingredient? Candied jalapeños. Yes, Karen, you heard me right. Candied jalapeños... they add so much!! This one ingredient has fallen in the “why didn’t I think of this?” category for sure!!

When I came up with this bit of goodness the grocery was not making my usual purchase in their deli. A hazard of quarantine. So I began grabbing ingredients to make my own and the results were very well received. Yes,, I had a captive audience and fortunately, they usually like my kitchen experiments.

The immediate response was 8 thumbs up (both hands) and an empty container. Many times I will serve this with crackers or corn chips; something strong if you are scooping. It also makes a great grilled cheese sandwich on your favorite bread. I made sourdough this spring and it was so good toasted, mixture piled on and then thrown under the broiler open face.
